  • With Easter days away, a light and refreshing cocktail is a must for your celebrations! On a recent weekend trip away with friends, I “mixed” up these fun and refreshing pink mimosas to enjoy on the deck when a welcome ray of sunshine poked through the clouds. This cocktail would be perfect for an Easter brunch with family or friends!

    I’ve had many different types of mimosas in my day but can honestly say I’ve never had a Pink Lemonade one! I liked the balance of sweet and tart combined with the prosecco bubbles dancing on my tongue (I used the Zago Millesimato Prosecco because I prefer a dryer style but feel free to use whatever sparkling wine you like). You can also play with the ratio of bubbles to juice depending on your preference, but I like mine with about 2 parts prosecco to 1 part pink lemonade. Feel free to “measure” by eye in the glass and adjust as you, or your friends, tastebuds require. Top them off with lemon slices and fresh berries (I suggest raspberries or strawberries) and you’ve got a light, refreshing take on a traditional mimosa.

    Ingredients
    • Pink Lemonade (can be bought in most grocery stores), chilled
    • Zago Millesimato Prosecco (or any sparkling wine), chilled
    • Fresh raspberries and/or strawberries to garnish
    • Lemon slices to garnish
    Directions
    1. Pour the chilled pink lemonade into the bottom third of your champagne flutes.
    2. Top with prosecco and garnish with lemon slices and fresh berries.
    3. Serve with your Easter brunch and enjoy!
