  • Creamy Shrimp Linguine with White Wine

    This Shrimp Linguine is so delicious and easy to make. The best part of this recipe is that it has simple ingredients like white wine, garlic, butter, basil, cream and cheese that makes it so tasty. I always like to use the white wine I’m going to pair it with while enjoying a glass, cooking. Pair this dish with nice white wine like Pinot Grigio or Chenin Blanc and you’ve got yourself a lovely meal.

    Serves 6

    Ingredients

    450 g (1 lb) linguine

    30 ml (2 tbsp) butter

    675 g (1 ½ lb) jumbo raw shrimp

    2 garlic cloves, minced

    185 ml (¾ cup) white wine

    60 ml (¼ cup) fresh basil, minced

    250 ml (1 cup) half and half cream

    125 ml (1/2 cup) parmesan cheese, grated

    1/2 lemon

    Salt and pepper to taste

    Fresh whole basil for finishing

    Directions

    1. Bring 4-5 litres of water to a boil. Add salt. Add pasta to boiling water. For “al dente” pasta, cook for 10 minutes, stirring occasionally. Drain pasta when done.
    2. While the pasta is cooking, heat butter in a large skillet over medium heat. Add the shrimp and cook the shrimp for 2 minutes until partially cooked. Add the garlic, white wine, minced basil, salt and pepper. Cook shrimp for another 3-5 minutes or until most of the wine has evaporated.
    3. Add the cooked pasta, cream, and parmesan to the shrimp pan. Toss everything together. Add salt and pepper to taste. Finish with a squeeze of lemon juice, whole basil leaves and additional parmesan cheese.
