This Beef Bourguignon dish is to die for! Cooked to perfection, the beef melts in your mouth and is accompanied by an assortment of hearty vegetables in a rich sauce. Try this dish with a glass (or bottle) of the Roche Nuances wine, found in our Adventurer all red and mixed, 2 and 4 packs.
Slow Cooker Beef Bourguignon
Ingredients
- 8 ounces applewood smoked bacon, chopped
- 2 ½ pounds boneless beef chuck cut in 1” cubes
- 1 cup cooking wine (we recommend a dry pinot noir)
- 2 cups beef broth
- ½ cup tomato sauce with chunks
- ¼ cup soy sauce (use tamari to make it gluten-free)
- ¼ cup flour (use gluten-free flour as an alternative)
- 4 garlic cloves, chopped
- 2 tbsp fresh thyme, chopped
- 6 carrots, sliced
- 1 pound yellow potatoes
- 1 pound mushrooms, washed and sliced
- Salt and pepper
Directions
- Cook bacon over medium-high heat in a skillet until crisp. Once done, place in slow cooker. Season the beef with salt and pepper and sear on each side for 2-3 minutes using the same skillet. Remove and place in slow cooker.
- Add the wine to the skillet, scraping the brown parts on the bottom. Let simmer and reduce. Add the beef broth, tomato sauce, and soy sauce. Whisk in the flour slowly to thicken. Once mixed, add sauce to the slow cooker.
- Add the herbs and chopped vegetables to the slow cooker and mix well. Cook on low for 8-10 hours.
- Serve with a slice of sourdough or multigrain bread and enjoy!
